Ingredients
  

Pasta
  • 8 oz pasta (fusilli or penne) cooked and cooled
Tuna
  • 2 cans canned tuna drained
Vegetables
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
  • 1/2 cup red onion finely chopped
  • 1/2 cup bell pepper diced
Dressing
  • 1/4 cup olive oil
  • 2 tbsp lemon juice freshly squeezed
  • 1 tsp dijon mustard
  • 1 tsp salt to taste
  • 1/2 tsp black pepper to taste
Herbs
  • 1/4 cup fresh parsley chopped

Method
 

Prepare Pasta
  1. Cook the pasta according to package instructions. Drain and let cool.
Mix Ingredients
  1. In a large mixing bowl, combine the cooled pasta, drained tuna, cherry tomatoes, cucumber, red onion, and bell pepper.
Make Dressing
  1. In a small bowl, whisk together olive oil, lemon juice, dijon mustard, salt, and black pepper.
Combine
  1. Pour the dressing over the pasta mixture and toss to combine. Add chopped parsley and mix well.
Serve
  1. Serve chilled or at room temperature.
