Prep & Season the Beef
- Pat the cut sirloin steak cubes thoroughly dry with paper towels on all sides. Moisture prevents proper searing! Season evenly with coarse sea salt, black pepper, garlic powder, and smoked paprika. Let sit at room temperature for 10 minutes.
Hard Sear in Batches
- Heat 1.5 tablespoons olive oil in a large 12-inch heavy cast iron skillet over high heat until smoking hot.
- Add the seasoned steak tips in a single layer without overcrowding (sear in two batches if necessary). Cook undisturbed for 2 to 3 minutes until a deep, dark golden-brown crust forms on the bottom.
- Flip steak tips and sear the other side for another 2 minutes for medium-rare to medium doneness.
Baste with Garlic Herb Butter
- Reduce skillet heat to medium-low. Add the butter cubes, minced garlic, rosemary, and thyme sprigs directly into the skillet.
- As the butter melts and foams vigorously, tilt the skillet slightly and use a large spoon to continuously baste the hot garlic herb butter over the steak tips for 60 to 90 seconds.
- Remove skillet from heat immediately. Scatter chopped fresh parsley over the top. Let the steak tips rest in the savory pan juices for 3 minutes before serving.
