Tacos al Pastor

Tacos al Pastor are a popular Mexican dish made with marinated pork, served in corn tortillas and topped with fresh pineapple, onions, and cilantro.

Ingredients
  

Marinade
  • 2 lbs pork shoulder thinly sliced
  • 3 tablespoons achiote paste
  • 1 cup orange juice
  • 1 tablespoon white vinegar
  • 2 cloves garlic minced
  • 1 teaspoon cumin
  • 1 teaspoon oregano
  • 1 teaspoon salt
  • 1 teaspoon black pepper
Taco Assembly
  • 12 pieces corn tortillas warmed
  • 1 cup pineapple diced
  • 1 cup onion finely chopped
  • 1/2 cup cilantro chopped
  • 1 lime lime wedges for serving

Method
 

Prepare the Marinade
  1. In a blender, combine achiote paste, orange juice, white vinegar, garlic, cumin, oregano, salt, and pepper. Blend until smooth.
  2. Marinate the pork shoulder slices in the mixture for at least 2 hours, preferably overnight.
Cook the Pork
  1. Preheat the grill to medium-high heat. Grill the marinated pork slices for about 3-4 minutes on each side until cooked through and slightly charred.
  2. Let the pork rest for a few minutes, then chop into small pieces.
Assemble the Tacos
  1. Place a portion of the grilled pork on a warmed corn tortilla.
  2. Top with diced pineapple, chopped onion, and cilantro. Serve with lime wedges.

Notes

For an authentic taste, use a vertical spit (trompo) to cook the pork, similar to traditional methods.
