Ingredients
  

Tortilla Base
  • 4 pieces Flour Tortillas
Salad Ingredients
  • 1 cup Shredded Cheese
  • 1 pound Ground Beef
  • 1 packet Taco Seasoning
  • 1 can Black Beans
  • 1 cup Corn
  • 1 cup Cherry Tomatoes
  • 1 cup Lettuce
  • 1 each Avocado
Dressing
  • 1/2 cup Sour Cream
  • 1/4 cup Fresh Cilantro
  • 1/4 cup Olive Oil
  • 2 tablespoons Lime Juice
  • 1 teaspoon Honey
  • 1 teaspoon Cumin
  • 1 teaspoon Salt
  • 1/2 teaspoon Black Pepper

Method
 

Cooking Instructions
  1. Preheat the oven to 375°F (190°C).
  2. Place flour tortillas in a muffin tin and bake until crispy.
  3. In a skillet, cook ground beef over medium heat until browned. Drain excess fat.
  4. Add taco seasoning to the cooked beef and follow package instructions.
  5. In a large bowl, combine black beans, corn, cherry tomatoes, lettuce, and avocado.
  6. In a small bowl, whisk together olive oil, lime juice, honey, cumin, salt, and black pepper to make the dressing.
  7. Toss the salad mixture with the dressing until well coated.
  8. Fill the crispy tortilla bowls with the salad mixture.
  9. Top with shredded cheese, sour cream, and fresh cilantro before serving.
