Ingredients
  

Chicken
  • 1 pound boneless chicken breasts cut into bite-sized pieces
Sauce
  • 1/2 cup sweet chili sauce
  • 2 tablespoons soy sauce low sodium preferred
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 1 teaspoon cornstarch mixed with 2 tablespoons of water
Vegetables
  • 1 cup bell peppers sliced
  • 1 cup broccoli florets
  • 1 cup carrots sliced
Garnish
  • 2 tablespoons green onions chopped
  • 1 tablespoon sesame seeds toasted

Method
 

Prepare the Chicken
  1. In a mixing bowl, combine the chicken pieces with soy sauce and let marinate for 10 minutes.
Cook the Chicken
  1. Heat a skillet over medium-high heat and add the marinated chicken. Cook until browned and cooked through, about 7-10 minutes.
Add Vegetables
  1. Add the bell peppers, broccoli, and carrots to the skillet. Stir-fry for about 5 minutes until vegetables are tender.
Make the Sauce
  1. In a small bowl, mix the sweet chili sauce, rice vinegar, sesame oil, and cornstarch mixture. Pour over the chicken and vegetables.
Finish Cooking
  1. Stir everything together and cook for an additional 2-3 minutes until the sauce thickens.
Serve
  1. Garnish with green onions and sesame seeds before serving.
