Pineapple Upside Down Cake with Box Cake

Ingredients
  

Topping
  • 1 can sliced pineapple drained
  • 1/2 cup brown sugar packed
  • 1/4 cup butter melted
  • maraschino cherries optional for garnish
Cake
  • 1 box yellow cake mix
  • 3 large eggs
  • 1/2 cup vegetable oil
  • 1 cup water

Method
 

Prepare the Topping
  1. Preheat the oven to 350°F (175°C).
  2. In a small bowl, mix melted butter and brown sugar until combined.
  3. Pour the mixture into the bottom of the greased cake pan.
  4. Arrange the pineapple slices over the brown sugar mixture and place maraschino cherries in the center of each slice if using.
Make the Cake Batter
  1. In a mixing bowl, combine the yellow cake mix, eggs, vegetable oil, and water.
  2. Mix with a whisk until smooth and well combined.
Bake the Cake
  1. Pour the cake batter over the pineapple topping in the cake pan.
  2. Bake in the preheated oven for 30-35 minutes or until a toothpick inserted in the center comes out clean.
  3. Let the cake cool for 10 minutes, then invert onto a serving plate.
