Ingredients
  

Pesto Ingredients
  • 2 cups fresh basil leaves packed
  • 2 cloves garlic peeled
  • 1/2 cup pine nuts lightly toasted
  • 1/2 cup Parmesan cheese grated
  • 1/2 cup extra virgin olive oil plus more if needed
  • 1/4 teaspoon salt to taste
  • 1/4 teaspoon black pepper to taste

Method
 

Making the Pesto
  1. In a food processor, combine the basil leaves, garlic, and pine nuts. Pulse until finely chopped.
  2. Add the grated Parmesan cheese and pulse again until mixed.
  3. With the processor running, slowly drizzle in the olive oil until the mixture is smooth and creamy.
  4. Season with salt and black pepper to taste, and pulse to combine.
  5. Transfer the pesto to a bowl and use immediately or store in an airtight container in the refrigerator.

Notes

Pesto can be stored in the refrigerator for up to a week. To prevent browning, drizzle a thin layer of olive oil on top before sealing.
