Ingredients
  

Salad Ingredients
  • 2 cups shredded green papaya
  • 1 cup shredded carrots
  • 1 cup cherry tomatoes halved
  • 1/2 cup green beans cut into 1-inch pieces
  • 1/4 cup fresh cilantro chopped
  • 1/4 cup peanuts crushed
Dressing Ingredients
  • 3 tablespoons fish sauce
  • 2 tablespoons lime juice
  • 1 tablespoon palm sugar or brown sugar
  • 1 clove garlic minced
  • 1 to taste Thai bird chili smashed

Method
 

Prepare the Salad
  1. In a large bowl, combine the shredded green papaya, shredded carrots, cherry tomatoes, green beans, cilantro, and crushed peanuts.
Make the Dressing
  1. In a mortar and pestle, combine the fish sauce, lime juice, palm sugar, minced garlic, and smashed chili. Pound until well mixed.
Combine and Serve
  1. Pour the dressing over the salad and toss well to combine. Serve immediately.
