  • 4 fillets salmon skinless
  • 1 cup orzo pasta
  • 2 cups chicken broth low sodium
  • 1 medium lemon juiced and zested
  • 2 tablespoons olive oil extra virgin
  • 2 cloves garlic minced
  • 1 cup spinach fresh

Method
 

  1. Heat olive oil in a skillet over medium heat. Add minced garlic and sauté until fragrant.
  2. Add the orzo pasta to the skillet and stir for 1-2 minutes.
  3. Pour in the chicken broth and bring to a boil. Reduce heat and simmer until orzo is tender.
  4. While the orzo cooks, season the salmon fillets with salt and pepper. Add to the skillet on top of the orzo.
  5. Cover the skillet and cook for about 6-8 minutes, or until salmon is cooked through.
  6. Add lemon juice, lemon zest, and spinach to the skillet. Stir gently until spinach wilts.
  7. Serve warm.
