Filling
  • 0.5 kilogram ground meat beef or lamb
  • 1 medium onion finely chopped
  • 1 teaspoon paprika
  • 1 teaspoon cumin
  • 1 teaspoon pepper
  • 1.5 teaspoons salt
  • 1 teaspoon cinnamon
  • 8 tablespoons butter divided
  • handful fresh parsley leaves chopped
  • 3 large eggs lightly beaten
  • 1.1 pound warqa, filo dough, or large spring roll wrappers
  • oil for frying

Method
 

Preparation
  1. In a mixing bowl, combine the ground meat, chopped onion, paprika, cumin, pepper, salt, cinnamon, chopped parsley, and lightly beaten eggs.
  2. Mix the ingredients thoroughly until well combined.
  3. Take a sheet of warqa or filo dough and place a spoonful of the meat mixture at one end.
  4. Fold the sides and roll to form a pastry, sealing the edges with the beaten egg yolk.
  5. Repeat the process until all the mixture is used.
  6. Heat oil in a frying pan over medium heat.
  7. Fry the briouats in batches until golden brown and cooked through.
  8. Remove and drain on paper towels before serving.
