Mexican Lasagna with Tortillas

A delicious and hearty Mexican lasagna made with layers of tortillas, seasoned ground beef, beans, cheese, and a flavorful tomato sauce.

Ingredients
  

Meat and Sauce
  • 1 lb ground beef or ground turkey
  • 1 can black beans drained and rinsed
  • 1 can diced tomatoes with green chilies
  • 1 packet taco seasoning
  • 1 cup salsa
Layers
  • 8 pieces corn tortillas
  • 2 cups shredded cheese cheddar or Mexican blend
  • 1 cup sour cream for topping

Method
 

Prepare the Meat Sauce
  1. In a skillet over medium heat, cook the ground beef until browned. Drain excess fat.
  2. Add black beans, diced tomatoes, taco seasoning, and salsa. Stir to combine and simmer for 10 minutes.
Assemble the Lasagna
  1. Preheat the oven to 375°F (190°C).
  2. Spread a thin layer of the meat sauce in the bottom of a 9x13 inch baking dish.
  3. Layer 4 tortillas over the sauce, followed by half of the remaining meat sauce and 1 cup of cheese.
  4. Repeat the layers, finishing with tortillas and the remaining cheese on top.
Bake
  1. Cover with foil and bake for 20 minutes.
  2. Remove foil and bake for an additional 10 minutes, or until cheese is bubbly and golden.
Serve
  1. Let cool for 5 minutes, then serve with sour cream on top.
