Vegetable Topping
  • 1/2 small red onion
  • 1 small cubanelle or green pepper
  • 1 small red pepper
  • 2 cloves garlic
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground allspice
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon regular chili flakes
  • 2 tablespoons tomato paste
  • 1 pinch salt
  • 1 pinch pepper
  • 1/4 cup flat leaf parsley
  • 200 g minced lamb or beef or vegan mince
Dough
  • 2 large eggs
  • 1/4 cup oil
  • 1 pinch salt
  • 1/4 cup water
  • 1 package Bob’s Red Mill Grain Free Flatbread Mix
Toppings
  • to taste dried sumac for sprinkling
  • to taste toasted pine nuts
  • to taste chopped fresh parsley
  • to taste sliced cucumber
  • to taste sliced red onion
  • to taste cherry tomatoes
  • to taste crumbled feta
  • to taste parsley dressed with lemon juice or red wine vinegar and olive oil

Method
 

Preparation
  1. Place the onion, garlic, peppers, tomato paste, and parsley in a processor and process until finely chopped; empty into a large bowl and stir in the meat and spices until fully combined.
  2. Preheat oven to 400 degrees F and line a large baking sheet with parchment paper.
  3. In a large bowl, whisk together eggs, oil, salt, water, and flatbread mix. Let sit for 5 minutes.
  4. Divide dough in half and on a lightly floured surface, roll into two 6-8 inch rounds using wet fingers to smooth edges.
  5. Divide the topping between the bases, spreading it to the edges of the dough in a thin even layer. Transfer to the baking sheet and bake for 10-15 minutes until the base is blistering and the topping is cooked.
  6. Remove from the oven, sprinkle with sumac and pine nuts, then top with salad or serve on the side.
