Ingredients

  • 8 oz high-quality Greek feta cheese in brine (crumbled)
  • 4 oz cream cheese (softened at room temperature)
  • 2 tbsp extra virgin olive oil
  • 1 tbsp fresh lemon juice
  • 1 tsp freshly grated lemon zest
  • 1 clove garlic clove (finely grated)
  • 1/4 cup pure wildflower honey (or hot honey)
  • 1 tbsp fresh rosemary leaves (finely minced)
  • 1/4 tsp crushed red pepper flakes (optional)
  • 3 tbsp roasted unsalted pistachios (chopped)
  • 3 tbsp fresh ruby pomegranate arils
  • to taste flaky sea salt and freshly cracked black pepper

Method

  1. Bring feta and cream cheese to room temperature for 15-20 minutes to ensure a silky, lump-free blend.
  2. Add crumbled feta, softened cream cheese, olive oil, lemon juice, lemon zest, and grated garlic into a food processor fitted with the S-blade.
  3. Process on high speed for 3 to 4 minutes, scraping down sides as needed, until light, fluffy, and completely smooth like whipped cream.
  4. In a small saucepan over low heat, gently warm the honey, minced fresh rosemary, and crushed red pepper flakes for 2 minutes until fragrant and loose (do not boil).
  5. Spoon the whipped feta into a wide shallow serving bowl. Use the back of a spoon to create deep, decorative swirling swooshes across the surface.
  6. Drizzle the warm infused rosemary honey generously into the swooshes.
  7. Scatter with chopped toasted pistachios, ruby pomegranate arils, fresh cracked black pepper, and a light pinch of flaky sea salt. Serve with warm pita and crostini.
