Ingredients
  

Dry Ingredients
  • 1 cup all-purpose flour
  • 2 tbsp sugar
  • 2 tbsp baking powder
  • 1/2 tsp salt
Wet Ingredients
  • 1 cup milk can substitute with almond milk
  • 1 large egg
  • 2 tbsp melted butter plus extra for cooking
  • 1 tsp vanilla extract optional

Method
 

Prepare the Batter
  1. In a mixing bowl, whisk together the dry ingredients: flour, sugar, baking powder, and salt.
  2. In another bowl, mix the wet ingredients: milk, egg, melted butter, and vanilla extract.
  3. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix; a few lumps are okay.
Cook the Pancakes
  1. Preheat a griddle or non-stick skillet over medium heat and lightly grease with butter.
  2. Pour about 1/4 cup of batter onto the griddle for each pancake.
  3. Cook until bubbles form on the surface, about 2-3 minutes, then flip and cook for another 2-3 minutes until golden brown.
  4. Repeat with remaining batter, greasing the skillet as needed.
Serve
  1. Serve warm with your favorite toppings such as maple syrup, fresh fruit, or whipped cream.
