Ingredients
  

  • 2 1/4 cups warm water
  • 4 teaspoons liquid honey for the dough
  • 1 tablespoon active dry yeast
  • 5 3/4 cups all-purpose flour
  • 2 1/4 teaspoons sea salt
  • 10 cups water for boiling
  • 1/4 cup liquid honey for boiling
  • 1 egg egg for egg wash
  • 2 tablespoons water for egg wash
  • 4 tablespoons Everything Bagel Seasoning

Method
 

  1. In a large mixing bowl, combine warm water, honey, and yeast. Let it sit for about 5 minutes until frothy.
  2. Add flour and sea salt to the yeast mixture, and mix until a dough forms.
  3. Knead the dough on a lightly floured surface for about 10 minutes until smooth and elastic.
  4. Place the dough in a greased bowl, cover, and let it rise in a warm place for 1 hour, or until doubled in size.
  5. Preheat the oven to 425°F (220°C).
  6. Punch down the dough and divide it into 12 equal pieces. Shape each piece into a bagel.
  7. Boil the 10 cups of water with 1/4 cup of honey in a large pot. Add the bagels to the boiling water, a few at a time, and boil for 1 minute on each side.
  8. Remove the bagels with a slotted spoon and place them on a baking sheet lined with parchment paper.
  9. In a small bowl, whisk together the egg and 2 tablespoons of water to make an egg wash. Brush the mixture over the bagels and sprinkle with Everything Bagel Seasoning.
  10. Bake in the preheated oven for 18 minutes, or until golden brown.
