In a wide, shallow bowl or pie dish, whisk together the eggs, milk, heavy cream, pumpkin puree, brown sugar, vanilla extract, pumpkin pie spice, cinnamon, and salt until completely smooth and emulsified.
Heat a large nonstick skillet or cast-iron griddle over medium heat and melt 1 tablespoon of butter until foamy.
Dip each slice of brioche into the spiced pumpkin custard for about 20 seconds per side, allowing the bread to absorb the custard thoroughly without becoming overly soggy.
Place 2 to 3 slices into the hot buttered skillet. Cook over medium-low heat for 3 to 4 minutes until the bottom is golden brown and caramelized.
Carefully flip and cook for another 3 to 4 minutes on the second side until puffed, golden, and cooked through in the center.
Repeat with remaining slices, adding more butter to the pan between batches as needed.
Serve warm with pats of sweet cream butter, a generous drizzle of warm pure maple syrup, and toasted pecans.
