Ingredients

For the Pastry & Cheese Filling
  • 1 sheet all-butter puff pastry thawed according to package instructions
  • 8 oz French brie cheese wheel rind kept intact or lightly trimmed, cut into 24 uniform cubes
  • 0.5 cup whole berry cranberry sauce homemade or high-quality canned
For the Aromatics & Honey Garnish
  • 0.33 cup walnuts roughly chopped and lightly toasted
  • 1 tsp fresh orange zest finely grated
  • 2 sprigs fresh rosemary small tender leaves picked for garnish
  • 2 tbsp pure wildflower honey warmed for finishing drizzle
  • 0.25 tsp flaky sea salt such as Maldon, for topping

Method

Prep Pan & Cut Pastry
  1. Preheat your oven to 375°F (190°C). Generously grease a 24-cup mini muffin tin with nonstick baking spray or melted butter.
  2. Unroll the thawed puff pastry sheet onto a lightly floured surface. Roll out slightly with a rolling pin into a 10x15-inch rectangle. Using a pizza cutter or sharp knife, cut into 24 equal squares (approx. 2.5 inches each).
Fill Pastry Cups
  1. Gently press each pastry square into a cavity of the prepared mini muffin tin, letting the corners point upward over the edges.
  2. Place one cube of brie cheese into the center of each pastry cup.
  3. Top each cube of brie with 1 teaspoon of whole cranberry sauce, a sprinkle of fresh orange zest, and chopped toasted walnuts.
Bake to Golden Perfection
  1. Bake at 375°F (190°C) for 14 to 16 minutes until the puff pastry edges are deeply golden brown and crisp, and the brie cheese is bubbly and molten.
  2. Remove from oven and let rest in the tin for 5 minutes to set slightly. Carefully lift each bite out using a small offset spatula or butter knife onto a serving platter.
  3. Garnish with fresh rosemary leaves, a pinch of flaky sea salt, and a generous drizzle of warm wildflower honey. Serve immediately while warm and gooey.
