Ingredients
  

  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 4 cups vegetable broth, low sodium
  • 1 can cannellini beans, drained and rinsed
  • 1 bunch escarole, washed and chopped
  • 1 teaspoon dried thyme
  • 1 teaspoon salt, to taste
  • 1/2 teaspoon black pepper, to taste
  • 1/4 cup parmesan cheese, grated optional
  • 1 tablespoon fresh parsley, chopped for garnish

Method
 

  1. Heat olive oil in a pot over medium heat.
  2. Add diced onion and minced garlic, sauté until the onion is translucent.
  3. Pour in the vegetable broth and bring to a simmer.
  4. Add the cannellini beans, chopped escarole, dried thyme, salt, and black pepper.
  5. Cook for about 15 minutes, until escarole is wilted and tender.
  6. Serve hot, garnished with grated parmesan cheese and chopped parsley if desired.

Notes
