Ingredients
  

Rice Base
  • 1 cup long-grain white rice
  • 2 cups chicken broth can substitute with vegetable broth for a vegetarian option
  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1 can diced tomatoes 14.5 oz can, drained
  • 1 cup frozen peas optional
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper to taste

Method
 

Cooking the Rice
  1. In a medium saucepan, heat olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.
  2. Add minced garlic, cumin, and paprika; cook for an additional minute until fragrant.
  3. Stir in the rice and cook for 2-3 minutes, allowing it to toast slightly.
  4. Pour in the chicken broth and add the diced tomatoes, salt, and pepper. Bring to a boil.
  5. Reduce heat to low, cover, and simmer for 15-20 minutes, or until rice is tender and liquid is absorbed.
  6. If using, stir in frozen peas during the last 5 minutes of cooking.
  7. Remove from heat and let it sit covered for 5 minutes before fluffing with a fork.
