Method
- In a small bowl, mix together all the frosting ingredients until light and fluffy.
- Remove the edges from the baked cake to avoid any crust in the cakesicles.
- Break up the cake into large pieces or crumbles in a large bowl.
- Add the frosting, starting with 2 tablespoons, and mix until combined.
- Test the mixture to see if it holds a ball shape when squeezed together; add more frosting if too dry.
- Set aside the cake mixture once it is soft and moldable.
- Melt the candy melts or chocolate in the microwave in 15-second increments, stirring in between.
- Add about 1 ½ tablespoons of melted candy to each mold cavity and spread evenly.
- Insert a popsicle stick into each cavity to create an opening; chill the molds in the fridge for 15-20 minutes or until set.
- Gently press the cake mixture into each mold, leaving a 1/16" gap at the top.
- Smooth out the top of the cake with your fingers or the back of a spoon.
- Add a dollop of melted coating on top of the cake and smooth it out.
- Use a bench scraper or the back of a flat knife to scrape off excess coating from the top.
- Insert the popsicle sticks into the openings at a slight downward angle for secure fit.
- Chill for 15-20 minutes or until set.
- To remove the cakesicles, stretch the sides of the mold away from the cakesicle and carefully push underneath to pop it out.
- Use a sharp knife to trim any excess coating on the edges if necessary.
- Decorate as desired with drizzled chocolate, candy melts, sprinkles, luster dust, etc.
