  • 1 0.25-ounce package active dry yeast
  • 4.5 cups all-purpose flour (plus more if needed)

  • 1 teaspoon fine sea salt
Boiling Solution
  • 9 cups water
  • 0.33 cups baking soda

  • 1 large egg (whisked with 1 tablespoon water)
  • pretzel salt or coarse sea salt for sprinkling

Method
 

Preparation
  1. In a large bowl, combine warm milk or water, brown sugar, and active dry yeast. Let it sit until foamy, about 5 minutes.
  2. Add flour, melted butter, and fine sea salt to the yeast mixture. Knead until a smooth dough forms, about 5-7 minutes.
  3. Place the dough in a greased bowl, cover with a towel, and let rise in a warm place until doubled in size, about 1 hour.
  4. Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
Cooking
  1. In a large pot, bring 9 cups of water and 0.33 cups of baking soda to a boil.
  2. Divide the dough into 12 equal pieces and roll each piece into a rope, then cut into bites.
  3. Boil the dough bites in the baking soda water for 30 seconds, removing them with a slotted spoon.
  4. Place the boiled bites on the prepared baking sheet, brush with whisked egg, and sprinkle with pretzel salt.
  5. Bake for 12-15 minutes or until golden brown.
