  • 1 tablespoon sugar
  • 1 tablespoon salt
  • 1 packet active dry yeast
  • 1.5 cups warm water
  • 1 cup shredded Asiago cheese plus extra for topping
  • 1 tablespoon baking soda

Method
 

  1. In a large bowl, combine the warm water and yeast. Let it sit for 5 minutes until foamy.
  2. In a separate bowl, mix the flour, sugar, and salt.
  3. Gradually add the flour mixture to the yeast mixture and mix until a dough forms.
  4. Knead the dough on a floured surface for about 8-10 minutes until smooth and elastic.
  5. Place the dough in a greased bowl, cover, and let it rise for 1 hour or until doubled in size.
  6. Preheat the oven to 425°F (220°C). Bring a large pot of water to a boil and stir in the baking soda.
  7. Punch down the dough and divide it into 8 equal pieces. Shape each piece into a bagel.
  8. Boil each bagel in the water for about 1 minute on each side.
  9. Remove the bagels from the water, place on a baking sheet, and sprinkle with extra Asiago cheese.
  10. Bake for 20 minutes or until golden brown.
