Ingredients
  

  • 1 teaspoon active dry yeast
  • 1 teaspoon granulated sugar
  • 11 cups water for boiling
  • 3 cups all-purpose flour
  • 1 teaspoon salt
  • 1 tablespoon olive oil
  • 2 tablespoons light brown sugar for sprinkling
  • 1 tablespoon baking soda for boiling
  • 3 ounces shredded asiago cheese for topping

Method
 

  1. In a bowl, combine the active dry yeast, granulated sugar, and 1 cup of warm water. Let it sit for about 5 minutes until foamy.
  2. In a large mixing bowl, combine the flour and salt. Make a well in the center and add the yeast mixture, olive oil, and remaining water. Mix until a dough forms.
  3. Knead the dough on a floured surface for about 10 minutes until smooth and elastic.
  4. Place the dough in a greased bowl, cover it, and let it rise in a warm place for about 1 hour or until doubled in size.
  5. Preheat the oven to 425°F (218°C) and line a baking sheet with parchment paper.
  6. After the dough has risen, punch it down and divide it into 6 equal pieces. Shape each piece into a bagel by rolling it into a ball and making a hole in the center.
  7. In a large pot, bring the 11 cups of water to a boil. Stir in the baking soda.
  8. Boil each bagel for about 1 minute on each side. Remove and place on the prepared baking sheet.
  9. Sprinkle the bagels with light brown sugar and shredded asiago cheese.
  10. Bake for 25 minutes or until golden brown.
