Cream Puff Pastry

  • 1/2 cup unsalted butter
  • 1/2 teaspoon sugar
  • 1/4 teaspoon salt
  • 1 cup all purpose flour
  • 4 large eggs
  • 3 large egg yolks
Apple Filling
  • 3.5 cups apples, diced
  • 2 tablespoons granulated sugar
  • 1 teaspoon ground cinnamon
  • a pinch kosher salt
Caramel Whipped Cream
  • 3/4 cup milk
  • 1/2 teaspoon vanilla extract
  • 1/2 cup heavy whipping cream
  • 4 ounces salted caramel sauce
  • 1 tablespoon unsalted butter

Method
 

Preparing the Cream Puffs
  1. Preheat the oven and prepare baking sheets as needed.
  2. In a saucepan over medium heat, combine water, butter, sugar, and salt; bring to a boil.
  3. Stir in flour until the mixture forms a ball and pulls away from the sides of the pan.
  4. Remove from heat and let it cool slightly.
  5. Beat in eggs and egg yolks one at a time until smooth and glossy.
  6. Pipe out the dough onto the prepared baking sheets in rounds.
  7. Bake until puffs are golden and hollow inside.
Making the Filling
  1. While cooling, prepare the apple filling by cooking apples with sugar, cinnamon, and a pinch of salt until tender.
  2. Mix heavy cream, milk, and vanilla extract in a bowl and whip until soft peaks form.
  3. Fold in caramel sauce gently into the whipped cream mixture.
  4. Cut the cooled puffs open and fill with apple mixture and caramel cream.
