  • 2 cups cucumber sliced
  • 1 cup red onion thinly sliced
  • 1 tablespoon olive oil extra virgin
  • 1 tablespoon white vinegar or apple cider vinegar
  • 1 teaspoon sugar optional
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper freshly ground
  • 2 tablespoons fresh dill chopped, optional

Method
 

Preparation
  1. In a mixing bowl, combine the sliced cucumbers and red onion.
  2. In a separate small bowl, whisk together the olive oil, vinegar, sugar, salt, and pepper.
  3. Pour the dressing over the cucumber and onion mixture and toss to coat.
  4. If using, add the chopped dill and mix gently.
  5. Let the salad sit for at least 10 minutes before serving to allow the flavors to meld.
