Ingredients
  

Cookie Base
  • 1 cup unsalted butter softened
  • 3/4 cup granulated sugar
  • 3/4 cup brown sugar packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
Crumble Topping
  • 1/2 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 1/4 cup brown sugar packed
  • 1/4 cup unsalted butter cold and cubed
  • 1/2 teaspoon cinnamon

Method
 

Prepare the Cookie Base
  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
  4. In a separate bowl, whisk together the flour, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
Make the Crumble Topping
  1. In a small bowl, combine the flour, granulated sugar, brown sugar, and cinnamon.
  2. Add the cold cubed butter and mix with a fork or your fingers until the mixture resembles coarse crumbs.
Bake the Cookies
  1. Drop spoonfuls of the cookie dough onto a baking sheet lined with parchment paper.
  2. Sprinkle the crumble topping evenly over the cookie dough.
  3. Bake in the preheated oven for 10-12 minutes or until the edges are lightly golden.
  4. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
