  • 5 ounces baby spinach
  • 6 ounces Greek feta, crumbled
  • 1 lemon, halved
  • 5 tablespoons extra-virgin olive oil
  • Salt and pepper to taste
  • 1 package potato gnocchi 16- to 17-ounce, shelf-stable, fresh or frozen
  • ¼ to ½ teaspoon crushed red pepper
  • 2 scallions, thinly sliced
  • 1 handful chopped dill
  • 1 handful chopped mint

Method
 

  1. Cook potato gnocchi according to package instructions until they float to the surface, then drain.
  2. In a skillet, heat olive oil over medium heat and add the cooked gnocchi. Cook until crispy and golden brown.
  3. In a large bowl, combine baby spinach, crumbled feta, sliced scallions, chopped dill, and chopped mint.
  4. Squeeze the juice of the halved lemon over the salad, and add salt, pepper, and crushed red pepper to taste. Toss gently.
  5. Serve the crispy gnocchi on top of the salad.
