Ingredients
  

Sweet Potatoes
  • 2 small sweet potatoes
Filling
  • 1 small onion
  • 200 g mushrooms
  • 2 cloves garlic
  • 60 g spinach
  • 1 heaped tbsp tahini
  • 1 tsp nutritional yeast
  • Salt to taste
  • Pepper to taste
  • ½ small lemon juice
  • 1 pinch cayenne pepper optional

  • Frypan
  • Baking tray

Method
 

Preparation
  1. Pre-heat the oven to 180°C fan and line a tray with baking paper.
  2. Wash sweet potatoes thoroughly then carefully pierce them with a knife.
  3. Bake sweet potatoes for 40 minutes or until soft.
Filling
  1. In the last 10 minutes of baking, add onion, mushrooms, and garlic in a frypan with a dash of water or olive oil.
  2. Sauté until the mushroom juices have evaporated before stirring through spinach, tahini, nutritional yeast, salt, and pepper.
  3. Further cook until spinach has wilted.
Assembly
  1. Once potatoes are ready, slice them down the middle, not going all the way through.
  2. Stuff each potato with the creamy mushroom and spinach mix.
  3. Squeeze lemon juice over stuffed potatoes and dust with cayenne pepper.

Notes
