Ingredients
  

  • 16 oz cremini or baby portobello mushrooms
  • 2 cups diced onion
  • 4 cloves garlic minced
  • 4 TBSP butter
  • ½ tsp dried thyme
  • ½ cup dry sherry
  • 4 TBSP all-purpose flour
  • tsp ground allspice
  • 2 cups vegetable broth
  • ½ cup half and half or heavy cream
  • 1 tsp soy sauce
  • ½ tsp salt
  • ¼ tsp black pepper

Method
 

  1. Sauté the sliced mushrooms, diced onion, and minced garlic in butter until softened.
  2. Add dried thyme and deglaze the pan with dry sherry.
  3. Stir in the flour and ground allspice, then gradually add vegetable broth.
  4. Simmer the mixture and add half and half or heavy cream, soy sauce, salt, and black pepper.
  5. Cook until heated through and then blend to a smooth consistency if desired.

Notes
