Ingredients
  

  • 2 Tbsp olive oil
  • 8 oz baby bella mushrooms, sliced
  • 1/2 large onion onion, halved and sliced thin
  • 3 cloves garlic, minced
  • 3/4 cup cashew cream
  • 1/4 cup water
  • 1 tsp bouillon vegan, no-chicken preferred
  • 1-2 Tbsp low sodium soy sauce or liquid aminos
  • 1 tsp herbs de Provence
  • 6 oz fresh baby spinach
  • 1 can butter beans (unseasoned), drained
  • salt to taste
  • vegan parmesan Optional
  • fresh parsley Optional

Method
 

  1. Heat olive oil in a pan over medium heat.
  2. Add sliced mushrooms and cook until browned.
  3. Stir in sliced onion and cook until translucent.
  4. Add minced garlic and sauté for 1 minute.
  5. Pour in cashew cream, water, and bouillon, and stir to combine.
  6. Add soy sauce and herbs de Provence; mix well.
  7. Fold in spinach and butter beans and cook until heated through.
  8. Season with salt to taste.
  9. Serve with optional vegan parmesan and fresh parsley.
