Ingredients
  

Crust
  • 1 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter cold and cubed
  • 1 large egg yolk
  • 1-2 tablespoons cold water as needed
Filling
  • 2 cups fresh cherries pitted and halved
  • 1/2 cup granulated sugar
  • 1 tablespoon cornstarch
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon juice

Method
 

Prepare the Crust
  1. In a mixing bowl, combine flour and sugar. Add cold butter and mix until crumbly.
  2. Stir in egg yolk and add cold water, one tablespoon at a time, until dough forms.
  3. Shape the dough into a disk, wrap in plastic, and refrigerate for 30 minutes.
Prepare the Filling
  1. In a separate bowl, combine cherries, sugar, cornstarch, vanilla extract, and lemon juice.
  2. Mix until cherries are well coated and set aside.
Assemble and Bake
  1. Preheat the oven to 350°F (175°C). Roll out the chilled dough and fit it into a baking dish.
  2. Pour the cherry filling into the crust and spread evenly.
  3. Bake for 30 minutes or until the crust is golden and the filling is bubbly.
  4. Allow to cool before serving.
