Ingredients
  

Chicken and Vegetables
  • 1 lb boneless, skinless chicken breasts diced
  • 2 cups cooked rice preferably day-old
  • 1 cup mixed vegetables peas, carrots, and corn
  • 2 large eggs beaten
  • 3 tablespoons soy sauce or to taste
  • 1 tablespoon sesame oil for flavor
  • 2 tablespoons vegetable oil for cooking
  • 2 cloves garlic minced
  • 1 teaspoon ginger minced
  • 2 scallions sliced for garnish

Method
 

Cooking the Chicken
  1. Preheat the Blackstone griddle over medium-high heat and add vegetable oil.
  2. Add the diced chicken and cook until browned and cooked through, about 5-7 minutes.
  3. Add minced garlic and ginger, cooking for an additional minute until fragrant.
Adding Vegetables and Rice
  1. Push the chicken to one side of the griddle and add the mixed vegetables to the other side.
  2. Sauté the vegetables for about 3 minutes until tender.
  3. Add the cooked rice to the griddle, mixing it with the chicken and vegetables.
Finishing Touches
  1. Create a well in the center of the rice and pour in the beaten eggs.
  2. Scramble the eggs until fully cooked, then mix them into the rice.
  3. Drizzle soy sauce and sesame oil over the rice, stirring to combine everything evenly.
  4. Garnish with sliced scallions before serving.
