Pork
  • 3 pounds pork loin or pork shoulder trimmed of fat and cut into 1’’ pieces
Vegetables and Seasonings
  • salt to taste
  • freshly ground black pepper to taste
  • 2 Tablespoons vegetable or canola oil
  • 1 large yellow onion chopped
  • 3 cloves garlic minced
  • 1/2 Tablespoon ground cumin
  • 1/2 Tablespoon dried oregano
Broth and Chiles
  • 2 cups low-sodium chicken broth
  • 4 fresh poblano chiles seeded and sliced in half
  • 2 fresh jalapeño peppers seeded and sliced in half
  • 1.5 pounds fresh tomatillos husks removed
  • 1/2 cup fresh cilantro coarsely chopped

Cooking Steps
  1. Heat vegetable or canola oil in a large pot over medium heat.
  2. Add the chopped onion and minced garlic, sautéing until softened.
  3. Season the pork pieces with salt and pepper, then add them to the pot.
  4. Cook until the pork is browned on all sides.
  5. Stir in the ground cumin and dried oregano.
  6. Pour in the low-sodium chicken broth, stirring to combine.
  7. Add the poblano chiles, jalapeño peppers, and tomatillos to the pot.
  8. Bring the mixture to a simmer, then cover and reduce heat to low.
  9. Cook for about 150 minutes, or until the pork is tender.
  10. Stir in the coarsely chopped cilantro just before serving.
