Ingredients
  

Salad Base
  • 2 cups cabbage, shredded green or purple
  • 1 cup carrots, grated
  • 1 cup cucumber, sliced preferably English cucumber
  • 1 cup red bell pepper, sliced
  • 1/2 cup green onions, chopped
  • 1/4 cup cilantro, chopped optional
Dressing
  • 3 tablespoons soy sauce or tamari for gluten-free
  • 2 tablespoons rice vinegar
  • 1 tablespoon sesame oil
  • 1 teaspoon honey or maple syrup for vegan
  • 1 teaspoon sesame seeds toasted

Method
 

Prepare the Salad
  1. In a large mixing bowl, combine the shredded cabbage, grated carrots, sliced cucumber, red bell pepper, chopped green onions, and cilantro.
Make the Dressing
  1. In a small bowl, whisk together the soy sauce, rice vinegar, sesame oil, honey, and sesame seeds until well combined.
Combine and Serve
  1. Pour the dressing over the salad and toss gently to combine. Serve immediately or chill for 30 minutes for flavors to meld.
