Ingredients
  

Fruits
  • 2 pounds fresh apricots pitted and chopped
Sugar
  • 4 cups granulated sugar adjust to taste
Acid
  • 1 tablespoon lemon juice freshly squeezed
Pectin
  • 1 box pectin for making jam

Method
 

Prepare the Apricots
  1. Wash the apricots, remove the pits, and chop them into small pieces.
Cook the Jam
  1. In a large pot, combine the chopped apricots, sugar, and lemon juice. Stir well.
  2. Bring the mixture to a boil over medium heat, stirring frequently.
  3. Once boiling, add the pectin and continue to boil for 1-2 minutes, stirring constantly.
  4. Remove from heat and skim off any foam that forms on the surface.
Jar the Jam
  1. Pour the hot jam into sterilized canning jars using a funnel, leaving about 1/4 inch of headspace.
  2. Seal the jars with canning lids and process in a boiling water bath for 10 minutes.
  3. Remove jars and let them cool completely before storing.
